Smashed Bean & Spinach Quesadillas

This easy recipe is a fantastic option for meal prep for a day ahead or even the week, they can be stored well both in the fridge or freezer, and have a lot of options for swap ins/outs. This recipe pairs incredibly with our Low-Calorie Tzatziki recipe.

2 Tortilla Wraps
100g Canned Cannelini Beans
100g Canned Black Beans
85g Baby Spinach
50g Feta Cheese
50g Mozzarella Cheese
1tsp Cumin
1tsp Cayenne Pepper
1 Sprig Coriander
For Meal Prep

8 Tortilla Wraps
400g Canned Cannelini Beans
400g Canned Black Beans
340g Baby Spinach
200g Feta Cheese
200g Mozzarella Cheese
2½ tsp Cumin
2½ tsp Cayenne Pepper
3 Sprig Coriander
Method
2) Add in your spices and stir into the mixture. Add salt and pepper to taste.
3) In a pan big enough for your tortillas, head with medium heat and 1 calorie cooking spray, and place your tortilla in the pan with your bean mix and cheeses on top. Fold the tortilla over and press down with a spatula, and cook for around 2-4 minutes, once golden brown on one side, flip and cook the other side of the tortilla until also golden brown.
4) Remove from the pan and enjoy! If meal prepping leave the quesadillas to cool before wrapping in tin foil.
