Blueberry Cheesecake Protein Cookies

These protein cookies are a fantastic snack, and unlike many other protein snacks, they’re relatively easy to make and not at all dry!
Macros per serving:
Ingredients
- 200g Blueberries
- 100g Light Cream Cheese
- 100g Greek Yoghurt
- 100g Oats
- 2 Scoops Protein Powder (Light colours seem to work best)
- 20g Chocolate Chips
- 1 Large Egg
- 0 cal Maple Syrup or Sweetener (To taste)
Method
1) In a bowl add your blueberries and microwave for 1 min, and then add into a pan and cook until a lumpy jam is formed.
2) In a mixing bowl add your other ingredients and then your blueberries and mix thoroughly. This should form a barely runny mixture. (Save a few chocolate chips for the end)
3) Preheat an oven to 200°C and cook 8 cookies on baking paper with 1 cal cooking spray for 12-15 mins. Careful to not overcook.
4) Remove, and place on a cooling rack, and place a few chocolate chips on top to melt.
5) Enjoy!
