Ingredients

  • 133g Chicken Breast (Raw) (100g Cooked)
  • 3 Baby Corn
  • 50g Purple Cabbage
  • ¼ Red Pepper
  • Handful Baby Spinach
  • 30g Cheddar Cheese (Grated)
  • 3 Mini Wholemeal Tortilla Wraps *
  • 50g Baresa Stir-in Tomato Sauce **
  • Chilli Flakes
  • Piri-Piri Seasoninig
  • Salt & Pepper

Method

1) In a pan with some 1 calorie cooking spray cook up you chicken breast with some of the seasonings, cook until cooked through, then take out the pan and leave to rest for a few minutes

2) In the same pan add all your vegetables sliced thinly with more seasoning and a shots worth of water in the pan. Cover with a lid or tinfoil and cook on medium for 4-5 minutes

3) Remove the lid, thinly slide longways your chicken breast and place on top of the veg. At this point add in your tomato sauce and stir well. Taste for seasonings and heat, and amend if needed.

4) Prep your wraps with equal amounts of cheddar on the bottom, and then wait until the sauce for the chicken and vegetables has thickened up sufficiently and isn't watery or runny

5) Equally distribute your fajita mix and enjoy!
