Cloud 9 Pancakes are the fluffiest, tastiest, most "I can't believe this is healthy" breakfast food going, they are 100% worth the extra effort to make and with revolutionise the way you look at breakfast foods! You can enjoy these savoury or sweet, so they're perfect whatever your taste palate and for breakfast, lunch or dessert.

Ingredients

Pancake Mix

  • 2 Large Eggs
  • 35g Flour
  • 1.5 tsp Baking Powder
  • 1tsp Vanilla Extract (Use any extract you like)
  • 2 tbsp Sweetener
  • 2 tbsp Almond Milk

Toppings (Adjust to your macros/preference)

  • 100g Greek Yoghurt (0% Fat)
  • 15g Protein Powder
  • 50g Berries

Method

1) In 2 bowls separate your egg whites and egg yolks (Careful not to get any yolk in the whites, if you do, start again).

2) Whisk your egg whites until they form stiff white peaks (I highly recommend you use an electric whisk, or you'll be there a while). You should be able to turn your bowl upside down without them falling out.

3) Whisk your yolks in the other bowl, and add in the following ingredients, mixing along before you add the next one.- Add your stevia- Add your flour (slowly bit by bit and mix)- Add your milk- Add your vanilla extract- Add your baking powderHere you want to end up with a thick paste with no lumps

4) Put a non stick pan with a lid on the hob and heat on a low temperature.

5) Now you want to fold your egg whites with your yolk mix. To do this use a soft spatula and FOLD the mixes together, don't stir or mix, you want to fold them gently until mixed, and maintain as much air in the mixture as you can. It will flatten a little, just do your best.

6) With some cooking spray on the bottom of the pan lay out a few small pancakes) around the size of the bottom of a soda can). Important: Leave enough mix for some more pancakes. Allow to cook for around 20 seconds and then add in 1tbsp of water into the pan with a table spoon,  (not onto the pancakes, around the side where it won't touch the pancakes), cover and allow to cook for 5-6 minutes.

7) Take off the lid, and layer another level of your mix onto of the already cooking pancakes, this will give it the layered effect, cook for another 2-5 minutes with the lid on, and a touch more water if evaporated.

8) Once the tops have started to firm up very gently flip the pancakes, cover and allow to cook again for another 2-3 minutes, until golden brown on both sides. Be gentle with these as they’re very airy and fluffy.

9) Once cooked, you should end up with a meringue/pancake hybrid. Tower up your pancakes and add toppings. You can choose whichever toppings you like, just adjust your ingredients and macros as necessary.

10) For the toppings given, mix your protein with your yoghurt, and microwave your berries for 20-30seconds to get them extra saucy.
