Prawn and Rocket Linguine

This classic simple dish from Italy is so simple to cook, very little effort but the payoff is incredible! Tangy tomatoes, citrus flavours and a touch of the Italian seaside!

Ingredients

  • 75g Dry Spaghetti *
  • 120g King Prawns
  • Large Handful Cherry Tomatoes
  • ½ Red Bell Pepper
  • 1 Clove Garlic
  • 1 tsp Olive Oil
  • Salt & Pepper, Basil, Chilli Flakes (Optional)
  • Large Handful Rocket
  • 1 Slice Lemon

Method

1) Cut your tomatoes in half, and add onto a baking tray with the oil, salt, pepper. Put in a 180 degree oven for 10-15 minutes. (To save on calories here, you can use a 1 calorie cooking spray

)2) Meanwhile, put the pasta onto boil, and finely dice your pepper and garlic, and add to a hot pan with some 1 cal cooking spray. Season with salt, pepper and chilli flakes and a good sprinkle of basil (fresh or dried is fine).

3) Add in the prawns to your hot pan and fry until cooked. Add in a little splash of the pasta water, and then drain your pasta. Add the pasta into the pan, alongside the roasted tomatoes and mix together.

4) Serve on top of rocket, and add some parmesan if desired! (Parmesan isn't counted in the calories so make sure to track this too!)
