Shakshuka, the ultimate recipe to make you feel like you’re eating the breakfast fit for a king or queen, but for very little time and effort. High in protein, hot and tasty, this is the perfect recipe to start your day off!

Ingredients
- ½ Tin Crushed Tomatoes (200g)
- 2 Rashers Bacon*
- ½ Tin Cannelloni Beans (200g)
- 1 Clove Garlic
- Handful Spinach
- 1 Large Egg
- Salt & Pepper (To taste)
- Smoked Paprika (optional)
- Chilli Flakes (optional)
- 1 Slice Toast (optional) *
* Use Turkey bacon to make leaner, and reduce calories
* Remove for vegetarian
** Select Low-FODMAP/Gluten-Free friendly bread if applicable
Method
1) Dice the bacon into small chunks, and add to a hot pan with fry lite, and the garlic crushed.
2) Fry for a few minutes until the bacon is crispy. Add the tomatoes, cannelloni beans, salt, pepper, and paprika, and stir, leaving to simmer for a 3-5 minutes.
3) Add in the spinach and allow to wilt. Make a well in the middle of the tomato sauce, and crack the egg into it. Cover the pan, allowing the egg to cook for a few minutes, longer if you want a hard yolk. Serve with toast to dip (optional)
